I confess that, although I was somehow drawn to this recipe it, nonetheless, seemed a little bland to me. So we added a clove of chopped garlic to each parcel as well as a little chopped fresh chili for a bit of zzzhooosh and it worked really well! We also sliced the potatoes, instead of cubing them, but just so that they would cook quicker. It was very nice and because it was so easy we will definitely be experimenting with it again.

Aww this reminds me of summer camp as a kid. They used to make this in a breakfast version. I'll have to send this recipe to my boyfriend who is leaving for a camping trip on Sunday.

I usually make tin foil dinners at least a couple of times a month. I find them very convenient when cooking for one or two people as there is very little preparation and clean up. I usually use a white fish and add vegetables. I make them in the oven.

I have made these grilled versions of a casserole before, each time with different base ingredients or the same base ingredients and different vegetables and seasonings. These are utterly delicious and so easy and fast to whip up! My favorite would have to be the grilled tin foil shepards pie type dinner, although without being able to grill I would usually just tin foil and then bake. Same concept, though, and so awesome!

I love making dinners like this - delish food with little cleanup and everyone always love them! If you have kids, they will love this, just because of the name!
