Easy Corn Casserole
Easy Corn Casserole is a terrific holiday side dish. Corn lovers will especially love this recipe because it uses whole kernel corn, cream-style corn, and Jiffy corn muffin mix. This corn casserole recipe may be simple, but that doesn't mean it's not fantastic. You'll still want seconds, and may be even thirds! Serve in a 9 inch square baking pan or a 2-quart casserole dish.

Corn casserole and corn pudding are two distinctly different recipes in our area. Corn casserole is a savory dish made with either drained canned corn, thawed frozen corn, or fresh corn cut off the cob then mixed with cornbread mix, eggs, and cheese. Corn pudding is a sweet dish made with creamed corn, sugar, extract, milk, and eggs. Both are baked in casserole dishes, but do not taste alike.

Paula Deen inspired? This isn't any different than a hundred different corn casserole/pudding recipes that have been around for generations.

I just returned from Savannah but did not eat at Paula Deen's restaurant. This recipe will probably show me what I missed but I am sure it is just as good. And you can add more cheese or less to your preference. It is easy to make. I love corn so I will probably love it. Thank you for the recipe.

My mom has always made scalloped corn for every Thanksgiving and Christmas that I can remember. I think corn casserole is more of a southern style recipe? The picture shows it bread like. But, the directions say if it is cooked in a casserole, it it more like pudding. Is it like a bread pudding?

Corn Casserole is a dish that my cousin usually brings to family pot luck meals and such. I always thought that the recipe was much more involved because it her dish is always so good. This recipe cannot get much easier. So all this time, she has been getting over like a fat rat being a EASY homemade dish. I ain't mad though.

The hardest thing about this recipe is waiting the 55 minutes for it to bake. I have plans to cook Thanksgiving this year and I am placing this recipe in the mix for this year. I have to feed at least a dozen people and this will be a great filler without breaking the bank.

This Paula Deen inspired corn casserole made a really good light Sunday lunch this past weekend. We had it with crusty Italian bread and a lovely leafy salad fresh from the garden. It was very nice indeed, the whole family loved it, so it has been added to our list of good dishes that we would like to repeat. Oh and it is true what they say about wanting seconds. And maybe thirds, lol!

My best friend makes this recipe every Christmas. I have asked her for the recipe, and I make the one she gives me, but it has to be different because mine never turns out the way hers does. Even my mother-in-law is in love with her version of the dish and has tried the recipe too with no such luck.

When I see recipes like this, I always think, "Why wasn't I born in the South?!" I love love love corn casseroles/puddings so this sounds incredible! Plus, with only 6 ingredients and approximately 5 minutes of prep time, who could refuse to give this a try?! Enjoy!

I didn't have a 9x9 inch pan, so I used a 9x13. It made it more of a casserole and less of a pudding. I loved it!

I think I would prefer it that way, too. If you're taking it to a potluck, I think the larger pan and slicing it or cutting into rectangles and scooping out with a flat turner is neater. In a small round baking dish, as pictured, it's great for a family, but at a potluck you would have lots of people smashing it and scooping it out from the same place, making it looked like it's been played in. lol But either way, it seems like it would be delicious!
