We do not get Stubbs Smoky Mesquite or Colby Jack in South Africa so we had to be quite inventive but it was, nonetheless, very good! Chicken thighs are my favorite (so much better than breasts, in my opinion) so I was really happy to make this recipe. With taco chips (and tortilla wraps for our two permanently ravenous teenagers) it was a very nice dip and we will definitely be having it again quite soon.

Thanks for the French bread suggestion- that's a great idea! I am not the biggest BBQ sauce fan but this recipe does look like a really great dip! I would probably like buffalo sauce with blue cheese or ranch dressing better to make more of a buffalo chicken dip! However, if you do want to stick to BBQ sauce, try Sweet Baby Ray's! It's the best!

Quick to make dips like this one are great to make when you have unplanned guests and want to give them a nice hearty snack. I like to toast some slices of French bread with a little garlic and olive oil brushed on top and let everybody scoop it on the top. The sweetness in the bbq sauce pairs nicely with the creaminess of the cheese.
