Coconut Shrimp with Orange Mustard Sauce
What's a party without shrimp? Make this delicious appetizer, a far cry from the standard shrimp and cocktail sauce, and you'll be a hit wherever you go. People will be clamoring for more!

Ingredients
- 1 1/4 pound unpeeled large shrimp
- 1 1/3 cup all-purpose flour
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1/8 teaspoon paprika
- 1 1/4 cup beer
- 2 cups shredded coconut
- Vegetable oil
- Orange Mustard Sauce (recipe below)
Instructions
- Peel and devein the shrimp leaving the tails intact.
- Combine flour, salt, pepper and paprika in a medium bowl, stirring well. Make a well in center of the flour mixture.
- Gradually add beer stirring until batter is smooth.
- Dip shrimp in batter then dredge in the coconut. Fry shrimp in hot oil until lightly browned. Drain in paper towels.
- Serve with Orange Mustard Sauce (recipe below).
Orange Mustard Sauce
- 1/4 cup plus 2 tablespoons orange marmalade
- 1/4 cup plus 2 tablespoons orange juice
- 2 tablespoons Dijon mustard
Combine marmalade, juice and mustard in a small bowl, stirring well. Makes 1 cup.
