I live in the Midwest, and at many of our diner - style restaurants they serve griddle - fried thin sliced potatoes as a breakfast side, commonly known as home fries. This recipe sort of reminds me of a dressed up version of these, so it might be fun to serve this as a hearty breakfast, with a couple of fried eggs on the side!

What a great variation of the classic nachos! I love potato skins, and this is really kind of a version of those, just in a somewhat different shape. I think bacon is the perfect meat for this dish, but I'd be interested in trying this with some ground beef with taco seasoning as well. Time to break out the mandolin and give this a try!
