Fiesta Spread for a Crowd

For an instant crowd-pleaser at all of your parties and events, make the Fiesta Spread for a Crowd. This delicious, Mexican-inspired dish is the perfect appetizer recipe for that big game-day party because it's so easy to munch on. With beans, avocado, sour cream, olives, tomatoes, chilies, and cheese, this dip is sure to be everyone's favorite. Use it as a dip for corn chips, or simply dump it on top of your favorite tortilla chips to make nachos - either way, it's delicious.

Ingredients

  • 24 ounces corn chips, divided
  • 1/4 cup melted butter
  • 2 (16-ounce) refried beans
  • 1 packet taco seasoning mix
  • 6 ounces avocado dip (guacamole)
  • 8 ounces sour cream
  • 1 (4-ounce) can sliced black olives, well drained
  • 2 large tomatoes, seeded and chopped
  • 1 (4-ounce) can chopped green chilies, well drained
  • 4 ounces shredded Mexican-style cheese

Instructions

To make the dip:

  1. Preheat oven to 350º F. Lightly spray a 9-inch cheesecake (springform) pan with cooking spray.

  2. Pulse 4 cups of the corn chips in a food processor to small crumbs; with the machine running, add the melted butter and pulse until it resembles wet sand. Press the mixture into the bottom and 1-inch up the sides of the prepared pan. Bake for 10 minutes, then cool on a wire rack.

  3. Stir together the refried beans and taco seasoning, then smooth the mixture into the baked crust. Layer the remaining ingredients:  avocado dip, sour cream, olives, tomatoes, and chilies. Cover with plastic wrap and chill 8 hours or overnight. When ready to serve, top with the shredded cheese and serve with the remaining corn chips for dipping.

Fritos as a crust? When I first saw this recipe I had to do a few double takes because I seriously thought that it had rice on the bottom. lol, This recipe is ingenious...and I can't wait to make it! Does the crust actually stay together like a normal crust would, or is it more crumbly?

There are so many things to love about this dip, it's hard to know where to begin. Guacamole? A huge hit! Mexican food is a favorite at my house, so including so many scrumptious foods all in one dip - and that CRUST! - well, it didn't last long!

The "crust" on this dip made it really unique in my book! Crushed chips as the base of a Mexican 7-layer dip... genius!

I'm not big on layered dips. I prefer enjoying one thing at a time. But I made this for a housewarming and people loved it.

This dip was great! I would make it without the olives, but everything else paired together perfectly.
