Island Wings
Ingredients
- 2/3 cup canned unsweetened coconut milk
- 1/2 cup orange marmalade
- 1/4 cup fresh lime juice
- 1/4 cup canned pineapple juice
- 2 teaspoons Worcestershire sauce
- 1 teaspoon hot sauce
- 1/2 cup grated sweetened coconut
- 3 cloves garlic, minced
- 1/2 teaspoon ground black pepper
- 1 tablespoon chopped fresh cilantro
- 20 trimmed and separated wings
Instructions
In a small saucepan over a high flame, heat the coconut milk and orange marmalade until the marmalade dissolves. Add the lime and pineapple juices, Worcestershire, hot sauce, coconut, garlic, pepper, and cilantro. Stir until hot; do not boil. Turn off heat. Transfer the mixture to a large mixing bowl and let it cool for 20 minutes. Add the wings and marinate for 4 hours in the refrigerator. Preheat the oven to 350. Remove the wings from the marinade with tongs and spread evenly on a buttered 2 inch deep baking dish. Bake for 25-30 minutes, turning occasionally, until brown, glazed, and cooked through. Transfer to a platter.
