Lemon Stuffed Avocado Eggs
Ingredients
- 1 avocado
- juice of 1 lemon
- 8 hard-boiled eggs
- 1/4 tsp Dijon mustard
- 1/4 tsp tarragon
- freshly ground pepper
- avocado julienne strips
- coarsely cracked black peppercorns
Instructions
Shell and halve the eggs. Mash avocado with lemon juice and the egg yolks. Mix through mustard, tarragon and seasonings. Mixture should be smooth and creamy. Pile into egg cavities and smooth over surface or pipe into cavity with a piping bag. Garnish with avocado strips and a good sprinkling of black peppercorns. Serve on a bed of finely shredded red cabbage.
