- 1 Box cherry tomatoes, halved
- Shaved Parmesan

Instructions

Preheat oven to 350 degrees F.

Thinly slice baguette on the bias and place on a cookie sheet. Lightly drizzle with olive oil and place in the oven.

Toast lightly, approximately 5 minutes.

Spread roughly a tablespoon of prepared pesto on each slice of bread. Top with shaved parmesan and tomato half. Sprinkle with chopped basil and sea salt.

If I was ever forced to choose a last meal this would be it! Probably with a gooey decadent chocolate dessert to follow, of course, lol. We did not have any parmesan but we did have Buffalo mozzarella balls which are just perfect. The combined flavors of the bruschetta, tomato, mozzarella, pesto and basil are delicious and a little freshly ground black pepper adds a delicious little extra.

What a super simple snack to toss together. I agree it's very much a summery snack and I could easily see indulging with a plate of these while lounging out on our deck. I might try substituting some thin provolone or another Italian cheese for the shaved Parmesan. A great little recipe to keep in mind for guests.

This is such a summery type of appetizer. I have never seen it made using cherry tomatoes. Only chopped tomatoes. But, this would save time. The fresh chopped basil adds a nice touch. There is nothing quite like fresh basil. Great for a dinner party or as something completely different for any get together.
