Roasted Eggplant Dip
"This recipe for roasted eggplant dip is actually a tasty recipe for baba ganoush (a Lebanese appetizer). It’s perfect for summer, since it's served cold and is perfect for dipping vegetable sticks and slices. Traditionally, it's served with pita bread or pita chips. If you grow eggplant in your garden, this is a fabulous way to use them up. After roasting the eggplant for 45 minutes, add it to a food processor with just a few other flavorful ingredients."
