Summertime Bruschetta
Ripe plum tomatoes and fresh herbs really make this bruschetta a summer standout. You won't have to heat up your kitchen making this crowd-pleaser, as the only cooking involved is toasting the baguette. So mix up a bowl of bruschetta topping and sit back and relax with a frozen cocktail because your work is already done.

Ingredients
- 16 plum tomatoes, very finely diced
- 4 tablespoons garlic, finely minced
- 1 cup fresh basil, coarsely chopped
- 1/2 cup fresh Italian parsley, finely chopped
- 2 tablespoons fresh lemon juice
- pinch crushed red pepper flakes
- Salt and freshly ground pepper
- 32 1/4-inch-thick slices French or Italian baguette
- 6 garlic cloves, cut in half
Instructions
1. In a large mixing bowl, combine the tomato, minced garlic, basil, parsley, lemon juice, red pepper flakes, and salt and pepper to taste.
2. Toss well and set aside for at least 3 hours.
3. Just before serving, toast the bread and rub the cut garlic cloves on one side.
4. Place a small bowl in the center of a serving platter. Fill the bowl with the tomato mixture and arrange the toast around the bowl. Serve immediately.
