Beef and Vegetable Fried Rice
Ditch the takeout carton and dig into this Beef and Vegetable Fried Rice! This simple recipe for ground beef fried rice is an easy way to enjoy Asian food at home. Use it as a side dish or enjoy it alone!
Notes
The 1 teaspoon of grated fresh ginger can be substituted by 1/4 teaspoon ground ginger.
Ingredients
- 1 pound lean ground beef
- 2 cloves garlic, crushed
- 1 teaspoon fresh ginger, grated
- 2 teaspoons vegetable oil
- 1 red bell pepper, cut into 1/2-inch pieces
- 1 (6-ounce) package frozen pea pods
- 3 cups rice, cooked, cold
- 3 tablespoons soy sauce
- 2 teaspoons dark sesame oil
- 1/4 cup green onions, thinly sliced
Instructions
- In large non-stick skillet, brown ground beef, garlic, and ginger over medium heat 8 to 10 minutes or until beef is no longer pink, breaking up into 3/4-inch crumbles. Remove with slotted spoon; pour off drippings.
- In same skillet, heat oil over medium-high heat until hot. Add bell pepper and pea pods. Cook 3 minutes or until bell pepper is crisp-tender, stirring occasionally.
- Add rice, soy sauce, and sesame oil; mix well. Return beef to skillet and heat through, about 5 minutes. Stir in green onions before serving.
