Chinese White Turnip Pickles
Ingredients
- 16 ounces turnip
- 1 1/2 T salt
- 2 1/2 cups boiling water
- 1 Thai chile
- 2 slices ginger
Instructions
Cut turnip into 1/2" x 2" dice. Mix salt and water and cool to room temperature. Put all ingredients in the pickle jar. Cover tightly, making sure that the veggies are covered by the brine. Stand 24 hours before use. Liquor may be re-used with addition of same quantity of salt.
