Teriyaki Chicken Stir Fry
Stir fry recipes are great when you need a fast weeknight meal that will please the appetite. Teriyaki Chicken Stir Fry is a sweet and salty dish that the family will love. Chicken is mixed with a homemade sauce made from pineapple juice and brown sugar, and is placed on a bed of white rice. Ingredients
- 2 boneless, skinless chicken breasts
- 8 ounces pineapple juice
- 3/4 soy sauce
- 2/3 cup granulated sugar
- 2/3 brown sugar
- 3 to 4 cloves of garlic
- 2 tablespoons cornstarch
- 1 tablespoon water
- 2 tablespoons olive oil
- 2 cups frozen stir fry vegetables
- dash of dry white cooking wine
Instructions

Coat a large wok with olive oil over medium heat.

Cube chicken breasts - add to wok and allow to cook, stirring frequently, for 5-7 minutes.

Add garlic, pineapple juice, soy sauce, sugars and wine; mix well. Cover and allow to simmer for 15 minutes.

Remove lid and add vegetables - cover and allow to simmer for an additional 5 minutes.

Combine cornstarch and water in a small bowl; mix well. Add to wok and stir until thickened. Serve stir fry over steamed white rice.
