Szechwan Chicken
Ingredients
- 4 chicken breasts
- 2 tablespoons light soy sauce
- 1 tablespoon dry sherry
- 2 tablespoons cornstarch
- 6 dried red peppers
- 1/2 medium onion
- 2 tablespoons sherry
- 2 tablespoons dark soy sauce
- 2 Tsp brown sugar
- 1 tablespoon sesame oil
- 1 tablespoon water
- 1 tablespoon cornstarch
- 3 tablespoons peanut oil
- chopped green onions
- chopped toasted peanuts
Instructions
Remove fat from chicken and cut into small pieces. Marinate in soy, dry sherry and cornstarch. Combine sherry, soy, sugar, sesame oil, water and cornstarch and set aside. Add peanut oil to a hot wok. Cook peppers for 15 seconds. Add chicken with marinade and cook over high heat, stirring constantly for 10 minutes. Add sauce mixture and cook until it thickens. Top with green onions and peanuts. Serve on rice.
