Homemade Jiffy Cornbread Mix

Cornbread mix is one of those things that you always grab at the store, but if you stop and think about it, it's not hard to make from scratch. Homemade "Jiffy" Cornbread Mix uses six ingredients and all you have to do is mix them together. If you're already making a recipe from scratch that incorporates cornbread, go the extra mile and make the cornbread mix from scratch, too. Homemade recipes give a better sense of accomplishment than semi-homemade.

My Grandmother would always prepare her cornbread from scratch and I would enjoy it each time. My Mother was more of the Jiffy cornbread mom and I loved hers too. Now I can update my cupboard with this mix so that it will always be fresh.

Of all cornbread's out there, box or homemade, my favorite is Jiffy. I never thought about making my own mix and not that Jiffy is expensive, but have you ever gotten an old box? The bread just crumbles when you cut and serve it. This will eliminate that issue from now on. Thanks for the recipe.

This is one of my favorite mixes. I used to buy this mix from the store every month, until I discovered this mix. Now I only have to make up a few batches about every two weeks, and I always have cornbread mix on hand. Plus I know exactly what is in it. I do leave out the vegetable oil. I don't like keeping this in my fridge. I just add that in when I make the muffins, works great!
