Caribbean Cowpeas and Rice
Ingredients
- 1 cup black-eyed peas, rinsed and drained
- 1 onion, chopped
- 1 jalapeno, seeded and minced
- 2 cloves garlic, minced
- 1/2 teaspoon cumin
- 1 teaspoon thyme
- 1 bay leaf
- 1 cup long-grain rice
- 1 cup vegetable broth
- 1/2 cup crushed tomato
- 1/2 cup allspice
- 1/2 teaspoon salt
Instructions
Soak peas. Combine peas with onion, jalapeno, garlic, cumin, thyme, bay leaf and 2 cups water. Boil. Reduce and simmer. Add rice, broth, tomato, allspice and salt.
