Carribean Red Beans and Rice

Ingredients

  • 1 diced onion, chopped
  • 3 cloves garlic, chopped
  • 1/4 - 1/2 tsp nutmeg
  • 1/4 - 1/2 tsp cinnamon
  • 1/2 - 1 tsp cloves
  • salt
  • black or cayenne pepper to taste
  • 1 can kidney beans, drained
  • 1 can (14 oz) tomatoes, chopped
  • 1 cup rice

Instructions

Saute onions and garlic in a little olive oil until onions are translucent. Add nutmeg, cinnamon, cloves, salt and pepper. Put beans in pan, saute around a little bit. Put tomatoes in and saute around a little bit too. Add rice and the appropriate amount of liquid, using the reseved kidney bean and tomato juice for some of it, and topping up with water. Cover the pan, let simmer until the rice is cooked.

Why screw up this recipe with canned beans? I'm not a fan of red kidney beans let alone from a can. I'd cook from scratch some pinto beans.
