Sweet & Sour Lentils
Ingredients
- 1/2 pound dried lentils
- 1/2 cup vegetable stock
- 1/3 cup apple cider
- 1/4 cup apple cider vinegar
- 1 1/2 tablespoon sugar
- 1 T. molasses
- 1/8 teaspoon ground cloves
- 2 bay leaves
- 1 T. chopped scallions
- dash (or more) cayenne
- chopped fresh ginger, to taste
- salt
Instructions
Cook lentils in 3 c. stock or water. Combine in small saucepan: stock, cider, vinegar, sweet stuff, molasses, cloves, bay leaves, scallions, cayenne, ginger. Bring to boil, boil 2 min. Combine with lentils and their cooking liquid. Add salt, cook until hot and bubbling. Serve with basmati rice.
