Meat Loaf Under Wraps
Ingredients
- 6 ounces can tomato paste (170g)
- 1 1/2 cup water (375ml)
- 1 1/2 pound lean ground beef (675g)
- 1 cup fine cracker crumbs (250ml)
- 1/2 cup finely chopped onion
- 1/2 cup green pepper (125ml)
- 2 eggs, separated
- 1/2 teaspoon salt (3 ml)
- 1/4 teaspoon pepper (1 ml)
- 3 cups hot prepared mashed potatoes (750ml)
- 1/4 cup shredded cheddar cheese (60ml)
- 1 tablespoon butter (15ml)
- 2 tablespoons brown sugar, packed (30ml)
- 2 tablespoons Worcestershire sauce (30ml)
- 2 tablespoons mushroom stems and pieces (30ml)
Instructions
Blend together tomato paste and water in small saucepan. Set aside. Combine in a bowl 1/2 cup of the tomato paste mixture, ground beef, cracker crumbs, onion, green pepper, egg whites, salt and pepper. Mix well. Shape mixture into a loaf in a shallow baking dish. Bake at 350 deg for 45 minutes. Meanwhile in a saucepan, combine hot prepared mashed potatoes, cheese, butter and egg yolks. Stir and heat 2-5 minutes to melt cheese. Drain fat from meat loaf. Frost with potato mixture. Bake 15- 20 minutes longer. Add brown sugar, Worcestershire and mushrooms to saucepan of remaining tomato paste mixture. Heat 3-5 minutes. Serve over slices of meat loaf. Makes 6- 8 servings.

Everyone will certainly enjoy the savory and delicious flavors of this meatloaf. For a healthier version of this dish, I would use reduced fat cheddar cheese and low sodium Worcestershire sauce. Pair this meatloaf with green beans, and this meal is complete.
