You had to go an one up my meatloaf with this mini meatloaves with mozzarella, didn't you? My hubby will be having me make meatloaf like this all the time now. He loves anything stuffed with mozzarella from mushrooms to chicken, and he doesn't even like chicken. Meatloaf stuffed with cheese is a no-brainer.
