The Best Zucchini Bread

Ingredients
- 1 cup sugar
- 2 eggs, beaten
- 2 teaspoons vanilla extract
- 3 cups grated fresh zucchini
- 2/3 cup coconut oil or melted unsalted butter
- 2 teaspoons baking soda
- pinch of salt
- 1/2 teaspoon all spice
- 2 teaspoons cinnamon
- 1 teaspoon dry ginger
- 3 cups all-purpose flour
- 1/2 cup roughly chopped walnuts
- 1/3 cup dry cranberries
- 1/3 cup raisins
Instructions

Preheat the oven to 350 degrees F (175C).

In a large bowl mix together wet ingredients: sugar, eggs, vanilla, grated zucchini.

In another bowl mix dry ingredients: baking soda, salt, spices, dry fruits, nuts and flour.

Mix dry ingredients into wet ingredients. Add 1/3 of dry ingredients to wet ingredients each time.

Transfer batter to 9â€x13†oiled, oven safe dish.

Bake for 50 minutes to 1 hour. Check if the bread is done after 50 minutes or until a wooden pick inserted into the center comes out clean.

Cool the bread for 10 minutes. Then remove from the pan and place on wire rack to cool thoroughly.
