Bacon and Egg Breakfast Nachos
If you like regular nachos, you're gonna love breakfast nachos!
These breakfast nachos are topped with bacon, potatoes, scrambled eggs, cheese and more and are perfect for your next brunch or even game day. What's not to love about nachos? We can't think of a thing!
This may not be the recipe you bring out during the weekday mornings when there's not a lot of time to sit down to a proper meal. But, this recipe does serve as the perfect weekend brunch centerpiece.
Create a breakfast nacho bar, and let everyone choose their own toppings! You can even serve these with a fun cocktail or mocktail to complete the scene. Margaritas anyone?

Ingredients
- 1/2 bag tortilla chips
- 2 eggs
- 3 tablespoons milk
- 1/2 teaspoon kosher salt
- 2 cups cooked frozen potatoes with onion and red peppers (Potatoes O’Brien)
- 1 cup shredded Mexican blend cheese
- 2 slices bacon, cooked and crumbled
- 2 breakfast sausage links, cooked and sliced
- 2 green onions, sliced
- Salsa
- Sour Cream

Directions

Heat oven to 450 degrees F.

In a small bowl whisk the eggs with the milk.

In a medium skillet scramble the eggs until cooked and sprinkle with salt.

On a parchment lined baking sheet place half of the tortilla chips. Top with half of the potatoes, half of the cheese and half of the eggs, bacon and sausage.

Repeat layers. Bake for 10-15 minutes until heated and the top is golden.

Top with green onions and serve with salsa and sour cream.

Bacon and nachos are my favourite. Having them both for breakfast is exciting. But no margaritas for breakfast.

I'm not really sure how I feel about margaritas for breakfast, but minus the bacon these nachos sound delicious. For some strange reason, I can't imagine the traditional tortilla chip with eggs but I'm thinking flour or pita chips would be really good. Another thing you could do is make up some fried eggs so that the yolk can ooze all over your nachos for a richer flavor. Yum!

I've never tried breakfast nachos before, but I like the idea! These were tasty, even though I think I'll always prefer regular nachos!
