Baked Ham and Cheese Omelet
"This Baked Ham and Cheese Omelet is the easiest way to prepare eggs for a crowd! It also works as a simple make-ahead breakfast, lunch, or dinner that can be reheated all week long when you need a quick meal. The low-carb, gluten-free, dish is full of protein and similar to a crustless quiche or frittata. Pair it with an English muffin for a breakfast sandwich, serve a fruit salad or a green salad on the side, and you have a nutritious and easy meal in minutes!"

What a great Sunday brunch dish which is exactly what we had it for last weekend when family and friend came to visit.. In terms of adding flavor I always prefer bacon to ham so that is what we used and we also added a chopped red bell pepper but other than that made no other changes. It is really tasty, filling and, more importantly, everyone loved it!
