This is such a great idea! I can't believe I have never thought to make a breakfast stuffed pepper. I love peppers in my omelets. Plus, you can never go wrong with cheese, bacon, and spinach, too! I would also add some chopped onions and tomatoes. This is great for a small brunch because guests can personalize their own pepper!
