Copycat Mimi's Cafe Buttermilk Spice Muffins
"These Buttermilk Spice Muffins are reminiscent of Mimi's Cafe. They have lovely domed tops and a sugary topping. They are the perfect breakfast or quick snack."
NotesIf you prefer jumbo muffins, the recipe will yield six. Lower oven temperature to 325 degrees F and cook an additional 5-10 min until a toothpick inserted in the middle comes out clean.

Ingredients
- 1/2 cup honey
- 1/4 cup butter
- 1/4 cup applesauce
- 3 eggs
- 1 cup white whole wheat flour
- 1 1/2 cup all purpose flour
- 2 1/4 teaspoons baking soda
- 1 teaspoon nutmeg
- 1/2 teaspoon cinnamon
- 1/2 cup buttermilk
- 1/2 cup sugar
- 1 cup walnuts (finely chopped)
- 1/2 teaspoon nutmeg
Instructions

Preheat oven to 350 degrees F. Grease a standard muffin tin or line with liners.

Beat together the butter, applesauce, and honey in a medium bowl.

Add eggs one at a time and beat another minute.

In a medium bowl, mix together the flours, baking soda, nutmeg, and cinnamon.

Add the flour mixture to the butter mixture and beat to combine. Add the buttermilk and beat again.

Divide mixture evenly among prepared muffin tin.

Combine ingredients for topping and divide evenly among muffins. Press down with the back of a spoon to make sure topping sticks.

Bake immediately for 20-25 minutes.

Remove from oven and let cool.
