Healthy Breakfast Cookies
Cookies for breakfast? That's right, this wonderful breakfast recipe comes from Jessica at Mad in Crafts and is delightful. Made with pecans, oats, bananas and craisins, you don't have to worry about eating too many of them.
Ingredients
- 3 bananas, mashed
- 1/3 cup apple sauce
- 2 cups uncooked quick-cooking oats
- 1/4 cup skim milk
- 1/2 cup craisins
- 1/3 cup pecans, chopped
- 1/3 cup sunflower seeds
- 1 teaspoon vanilla
- 1 tablespoon cinnamon
- 1 tablespoon sugar
Instructions

Preheat oven to 350 degrees F.

Mix all ingredients together. Spoon the dough by teaspoonful onto a greased cookie sheet.

Bake for 15 minutes. Cool and serve. Leftovers can be frozen.

These sound good but I would need to know the calorie count as well as carbs, etc.

Since I cannot have nuts due to irritable bowels, would I need to change any other ingredients when I leave them out of this recipe?

I think the mixture would be too moist without the nuts. Try adding a combo that you like of coconut, your fav. breakfast cereal, dried fruits, and maybe even a bit of instant brown rice.
