Overnight Gingerbread Oatmeal
"Gingerbread Oatmeal is the perfect hands-off gingerbread oats recipe for the holidays. These gingerbread oats are bursting with holiday spices, like cinnamon, nutmeg, ginger, cloves, and all spice. Let your slowcooker do the work for your Christmas oatmeal! Until now, I’ve only used my slow cooker for savory dishes, like Slowcooker Roasted Potatoes and Pumpkin Chicken Chili.I think a slowcooker is the key to creamy oatmeal when using steel cut oats. Just combine all your ingredients in the slowcooker. Stir well to mix all the flavors together. Cover and cook on high for 4 hours or on low for 6-8 hours."

- 1 tablespoon Coconut oil or butter (optional)
- 1 cup Uncooked steel cut oats
- 6 cups Water
- 2 cups Milk of choice (I used almond milk)
- 1 teaspoon Salt
- 2 teaspoons Cinnamon
- 1 teaspoon Ginger
- 1 teaspoon Nutmeg
- 1 teaspoon Cloves
- 1 teaspoon Allspice

Combine all ingredients in slow cooker, stirring well to mix the flavors around.
