These pancakes are amazing! Since they are not too sweet, they can be made into either a sweet breakfast treat, or a fancy savory one. Although they are called Russian pancakes, they remind me a lot of the different French creations that Jacques Pepin makes. You can be creative and choose whatever toppings / fillings you would like. I might even make a smoked salmon spread with cream cheese and scallions and smear it on mine.
