1 2 3 Jambalaya
The title says it all: this Jambalaya is quick and easy! Create a classic taste in half the time.
Ingredients
- 1 large onion, diced
- 1 large green pepper, diced
- 1 smoked sausage, cut into 1/4 slices
- 1 tablespoon olive oil
- 4 cups chopped cooked chicken
- 3 cups uncooked long-grain rice
- 2 cans French onion soup (10 1/2 oz), undiluted
- 1 can chicken broth (14 1/2 oz)
- 1 can beef broth (14 1/2 oz)
- 2 teaspoons Creole seasoning
- 2 teaspoons hot sauce
- fresh cilantro sprigs, to taste
Instructions
1. Saute first three ingredients in hot oil in a Dutch oven 4 to 5 minutes or until sausage browns. Stir in chicken and next 6 ingredients.
2. Bake, covered, at 350 degrees for 40 minutes, stirring after 30 minutes. Garnish, if desired.

the rice does not cook properly using this recipe. i had to increase the temp & time but it never did cook correctly. we ended up eating crunchy rice.
