Leftover Ham Jambalaya
Throw in whatever you can find in this meaty jambalaya for a nice hearty leftover meal. It is perfectly seasoned and great for getting rid of some of your leftover ham for a fresh new dish. This is a great ham recipe for the family.
Ingredients
- 1 1/2 pound hot sausage
- 3 tablespoons olive oil
- 1 pound ham
- 4 onions, chopped
- 2 bell peppers, chopped
- 1 can tomatoes
- 6 cups chicken stock
- 4 cloves garlic, minced
- 4 bay leave
- 1/4 teaspoon allspice
- 1/4 teaspoon clove
- 1/2 teaspoon thyme
- 4 cups uncooked rice
- 1 bunch green onions, chopped
- seasoning salt, to taste
Instructions
- Cut ham and sausage into small pieces and fry.
- Add onions, peppers and tomatoes. Cook 5 minutes.
- Add herbs, garlic and stock, cook 20 minutes, add seasoned salt and rice, cook until rice is almost done--then add green onions, finish cooking. Let stand 10 minutes before serving.
