Apple Cake ( Aeblekage) Denmark
Ingredients
- 2 pounds apples, pared, quartered, and cored
- sugar to taste
- 1 teaspoon vanilla
- 4 cups dry bread crumbs or 4 cups cake crumbs
- 2 cups fruit jam
- 1 cup butter, melted
- 1/2 cup heavy cream, whipped
- 1 cup red currant jelly
Instructions
Cook apples with a little water until soft. Press through sieve. Add sugar and vanilla. Spread successive layers of crumbs, applesauce, crumbs, and jam in greased baking dish, ending with layer of crumbs. Press down in dish. Pour butter over. Bake at 400 deg F. for 30 minutes. cool. Garnish with whipped cream and jelly. Serves 8. Note: You can substitute bottled apple sauce adding vanilla and if needed, more sugar.

This cake brings back so many wonderful memories from my childhood. I was born in Copenhagen, Denmark, and for years, every Sunday my Mother would serve this for afternoon tea, topped with lots of real whipped cream, and redcurrant jam. Thank you for posting this recipe, please try it , I know it be become one of your favourites too.
