Ingredients: 450 gram crushed pineapple; 125 gram butter; 375 gram mixed fruit; 1 cup sugar; 1 tsp mixed spices; 1 tsp baking soda; pinch salt; 1 cup self raising flour; 1 cup plain flour; 2 beaten eggs

Boiled Pineapple Fruit Cake

Ingredients

450 grams crushed pineapple
125 grams butter
375 grams mixed fruit
1 cup sugar
1 tsp mixed spices
1 tsp baking soda
pinch salt
1 cup self raising flour
1 cup plain flour
2 beaten eggs

Instructions

Boil pineapple, butter, fruit, sugar, spices, soda anbd salt for 10 mins. allow to cool. Add sifted flours and eggs. Place mixture in a 18cm square tin lined with greaseproof paper. Cook for 1 hr. at 160 C. Test with skewer. Leave in tin for 5 mins., then turn on to rack to cool. Store in airtight container.
