Boiled Pineapple Fruit Cake
Ingredients
- 450 grams crushed pineapple
- 125 grams butter
- 375 grams mixed fruit
- 1 cup sugar
- 1 tsp mixed spices
- 1 tsp baking soda
- pinch salt
- 1 cup self raising flour
- 1 cup plain flour
- 2 beaten eggs
Instructions
Boil pineapple, butter, fruit, sugar, spices, soda anbd salt for 10 mins. allow to cool. Add sifted flours and eggs. Place mixture in a 18cm square tin lined with greaseproof paper. Cook for 1 hr. at 160 C. Test with skewer. Leave in tin for 5 mins., then turn on to rack to cool. Store in airtight container.
