Coconut Milk Cake
Ingredients
- 3/4 cup unsalted butter
- 1 1/2 cup granulated sugar
- 3 eggs
- 1 whole, fresh coconut
- 1 cup water
- 3 cups all-purpose flour
- 3 teaspoons baking powder 1/2 tsp. salt
Instructions
Crack the coconut and remove the juice and coconut. Place in a blender with 1 cup of water and blend until fairly smooth. Cream butter and sugar. Add eggs one at a time and beat well. Stir in coconut mixture alternately with dry ingredients and beat well. Bake in a greased tube pan at 350 for about 50 minutes. Serve warm.
