Ingredients: 3 cup flour; 1 tsp baking soda; 1/4 tsp salt; 1 tsp cinnamon; 2 cup sugar; 3 cup chopped, peeled apples; 3 eggs; 1 cup coarsely chopped nuts; 1 1/2 cup vegetable oil; 2 tsp vanilla

Country Apple Cake

Ingredients

3 cups flour
1 tsp baking soda
1/4 tsp salt
1 tsp cinnamon
2 cups sugar
3 cups chopped, peeled apples
3 eggs
1 cup coarsely chopped nuts
1 1/2 cup vegetable oil
2 tsps vanilla

Instructions

Mix sugar, oil, eggs and vanilla. Stir together dry ingredients. Mix the wet and dry ingredients and then stir in nuts and apples. Place in 9 x 12 x 2 glass baking dish. Sprinkle top with cinnamon. Bake at 350 F for 25 to 40 minutes, until cake begins to pull away from the sides of the pan. Glaze with a simple glaze if desired.
