Easter Simnel Cake
"English Easter Simnel cake has been known since the medieval times. It's a rich cake with marzipan, dried fruit and syrup coming into action after the Lent abstinence. Traditionally it has marzipan inside, marzipan on top and even features eleven little marzipan balls or eggs to boot, apparently meant to represent the eleven apostles, Judas excluded. I decided to forgo the double marzipan whammy for fear that it would make an impossibly sickly end product. But the marzipan is homemade which is a must, and a layer of cheerfully coloured icing goes on top. Happy Easter!"
