Gingerbread
Ingredients
- 1 cup dark molasses
- 1/2 cup brown sugar
- 1/2 cup oil
- 1/2 teaspoon cinnamon
- 1/2 teaspoon cloves
- 1/2 teaspoon nutmeg
- 1 teaspoon ginger
- 1 cup boiling water
- 2 1/2 cups flour, unsifted
- 1 teaspoon baking soda
Instructions
Blend together first 7 ingredients and stir in boiling water. Mix in unsifted flour. Dissolve baking soda in 2 tablespoons of hot water, add to batter. Pour into greased 8 x 8 x 2-inch cake pan. Bake 30 minutes at 350 F. Yield: 1 pan (9 servings).
