    Peach Cake

    Ingredients

    • 3 cups fresh peaches, sliced
    • 1 cup sugar
    • 1/2 tsp almond extract
    • grated rind of 1 lemon
    • juice of 1 lemon
    • 1 cup flour
    • 1/3 cup shortening
    • 1/2 cup milk
    • 1 tsp salt
    • 3 tsps baking powder
    • 1 egg
    • 3 Tbsp sugar

    Instructions

    Put peaches into a 10 X 6 1/2 inch baking dish, sprinkle w/ 1 cup of sugar, almond extract, lemon juice and the lemon rind. Mix together the flour, salt, baking powder, 1 Tbsp sugar. Cut in the shortening and add the milk, and egg. Dot over the peaches and sprinkle the remaining sugar over the top. Bake at 400F for 35 - 40 minutes.
