Pina Colada Upside Down Cake

Ingredients

  • 1 yellow cake mix
  • 3 eggs
  • 1 cup pina colada mix
  • 1/3 cup rum or pineapple juice
  • 1/2 cup butter
  • 1/2 pound dark brown sugar
  • 1/4 cup coconut
  • walnuts or pecans, to taste
  • maraschino cherries, to taste
  • 1 can pineapple rings
  • 1/3 cup oil

Instructions

  1. Preheat oven to 350 degrees F.
     
  2. Melt butter in bottom of cake pan. Sprinkle brown sugar in bottom. Place cherries, pineapple, and nuts in pan.
     
  3. Mix cake mix, eggs, pina colada, rum, coconut, and oil for 2 min.
     
  4. Bake for 35 to 40 minutes. Cool 5 minutes and invert onto serving dish.
