Pina Colada Upside Down Cake

Ingredients
- 1 yellow cake mix
- 3 eggs
- 1 cup pina colada mix
- 1/3 cup rum or pineapple juice
- 1/2 cup butter
- 1/2 pound dark brown sugar
- 1/4 cup coconut
- walnuts or pecans, to taste
- maraschino cherries, to taste
- 1 can pineapple rings
- 1/3 cup oil
Instructions
- Preheat oven to 350 degrees F.
- Melt butter in bottom of cake pan. Sprinkle brown sugar in bottom. Place cherries, pineapple, and nuts in pan.
- Mix cake mix, eggs, pina colada, rum, coconut, and oil for 2 min.
- Bake for 35 to 40 minutes. Cool 5 minutes and invert onto serving dish.
