Pineapple Upsidedown Cake Mix Cake
Pineapple Upsidedown Cake Mix Cake is the shortcut way to make this classic dessert. Ingredients
- 1 box yellow cake mix, prepared
- 1 stick butter
- 2 cups brown sugar
- 1 can pineapple chunks, drained
- 10 maraschino cherries
- 1 can mandarin oranges, drained
- 1 kiwi, peeled and sliced thin

Instructions

Preheat oven to 375 degrees F. Prepare the cake batter according to package directions. Set aside.

Place butter in 9x13-inch baking dish. Place dish in the oven and melt butter. Carefully remove the dish from the oven and add brown sugar evenly over the melted butter.

Sprinkle pineapple chunks, cherries, oranges and kiwis evenly over the brown sugar mixture.

Gently pour cake batter over the top of the fruit, spread evenly.

Bake 30-35 minutes. Allow cake to cool for 5-7 minutes and then carefully turn out onto a board.

Serve warm or cold.

This brings back memories. My grandmother and my mother did make this cake. I remember when it was flipped over, still warm from the pan and the pineapple rings with a cherry center would glisten in the sauce. This is interesting using chunk style pineapple instead. I'm not keen on kiwi so I'd go the traditional way and leave that out. This is an old fashioned and delicious dessert. Easy to make too!

oh, how I love pineapple upside down cake! It is such an old-fashioned classic dessert. I won't use kiwi in my recipe, but everything else will stay the same. I can't wait to serve it with ice cream and a hot cup of coffee. Yummy! I'm thinking I'll make it Easter weekend.
