    Tomato Soup Cake

    Ingredients

    • 2 1/4 cups cake flour
    • 1 1/3 cup sugar
    • 4 teaspoons baking powder
    • 1 teaspoon baking soda
    • 1 1/2 teaspoon allspice
    • 1 teaspoon cinnamon
    • 1/2 teaspoon ground cloves
    • 1 10 oz. can condensed tomato soup
    • 1/2 cup shortening
    • 2 eggs
    • 1/4 cup water

    Instructions

    Preheat oven to 350 degrees. Grease and flour 2 8 or 9 inch round layer pans or a 13 x 9 oblong pan. Measure dry ingredients into a large bowl. Add soup and shortening. Beat at low-medium speed for about 2 minutes, scraping sides of bowl constantly. Add eggs and water. Beat for 2 more minutes, scraping bowl frequently. Pour into pan(s). Bake 35-40 minutes. Let stand in pan(s) for 10 minutes, remove and cool on rack.
