    Waldorf Apple Cake

    Ingredients

    • 4 medium apples, coarsely chopped
    • 1/2 cup brown sugar
    • 1/2 cup white sugar
    • 1 teaspoon cinnamon
    • 1/2 teaspoon nutmeg
    • 3/4 cup raisins
    • 1/2 cup walnuts
    • 1 1/2 cup flour
    • 2 teaspoons baking powder
    • 1 teaspoon salt

    Instructions

    Chop apples into bowl. Mix in sugars, spices, raisins and nuts. Add 1/2 cup oil and 1 egg, unbeaten. Mix well. Batter will be stiff. Spread in 8" x 8" pan and bake at 375 degrees F for 40 minutes. Serve with the following sauce: 1/2 cup brown sugar 1 Tbsp. cornstarch 3/4 cup water 2 tsp. margarine 1/2 tsp. vanilla Shake brown sugar, cornstarch and water in jar. Cook in a saucepan until clear and thick. Remove from heat and add margarine and vanilla.
