    Zucchini Fruit Cocktail Loaf

    Ingredients

    • 3 eggs
    • 2 cups sugar
    • 1 cup veg oil
    • 2 teaspoons vanilla
    • 2 cups shredded zucchini
    • 1 can fruit cocktail, drained
    • 3 cups flour
    • 2 teaspoons b. soda
    • 1 1/2 teaspoon cinnamon
    • 1 teaspoon salt
    • 3/4 teaspoon nutmeg
    • 1 cup chopped nuts

    Instructions

    Mix in order given. grease and flour 2 loaf pans. Bake at 325F for 50 minutes to 1 hour or until toothpick comes out clean. Notes: If I have a couple of ripe bananas around I mash them and add to the batter. Serve this with butter, cream cheese or strawberry butter.
