Jamaican Fruit Cake
Ingredients
- 3 cups flour, sifted
- 3 cups brown sugar
- 2 pounds butter
- 3 tsps baking powder
- 12 medium eggs
- 1/2 pound mixed fruits
- 1/2 pound raisins
- 2 tbsp rum
- 1/2 cup wine
- 1/2 cup molasses
- 1 tbsp vanilla
- 1 tsp salt
- 1 tsp mixed spice
Instructions
Cream butter and sugar. Beat eggs thoroughly; add to the creamed butter and sugar. Add flour 1 cup at a time. Add baking powder and salt. Stir in fruit, rum, wine and molasses until you get a smooth paste. Bake 350F until done.
