Ingredients

  • 2 cups broccoli, chopped
  • 2 cups mushrooms, chopped
  • 3/4 cup onion, chopped
  • 1 cup peppers, chopped
  • 1/4 cup chick peas
  • 1/2 cup egg substitute
  • 1 ounce lowfat mozzarella cheese
  • 1 teaspoon light mayonnaise
  • 2 teaspoons slivered almonds

Instructions

  1. Preheat oven to 350 degrees F.
     
  2. Put veggies in a large casserole pan.

  3. Mix egg substitute, cheese, and mayo. Pour over vegetables.
     
  4. Sprinkle almonds over the top. Bake for 35 to 40 minutes.

I like broccoli and cheese casseroles so this would be a good recipe to try. Adding other vegetables to the broccoli, provides more variety. The list of ingredients looks relatively healthy and low-fat. To make the casserole creamier, I would use some reduced sodium and lower fat mushroom soup.

Disaster. Needs more eggs substitute or something.

what are the nutritive values for this yummy sounding recipe? I'd like to try it, but would like to have this info.

Ditto: Please post the nutritional numbers for diabetes, high blood pressure (sodium) and high colesteral.

I love these recipies however I would like to see the nutritional numbers for each recipe. Calories, carbs, sugar, fiber and protein. For diabetics it helps for those of us who can't figure too well. thanks if you could put a link on here so we could get them.
