Biscuit and Corn Casserole

Ingredients

  • 1/2 cup margarine
  • 1 can (14-ounce) cream corn
  • 1 can (14-ounce) kernel corn drained or frozen kernel corn
  • 1 cup sour cream or yogurt
  • 2 eggs, beaten
  • 2 1/2 cups biscuit mix
  • 1/4 cup cornmeal

Instructions

  1. Preheat oven to 350 degrees F.
     
  2. Melt margarine and spread to cover pan. Pour remaining melted margarine into a separate bowl.
     
  3. Add cream corn, kernel corn, sour cream or yogurt, eggs, biscuit mix, and cornmeal to bowl and blend until mixed.
     
  4. Pour into pan and bake for 40 to 50 minutes. Serve warm.
