Cattle Drive Casserole
This hearty casserole uses Bisquick and ground beef to make a meal that will keep everyone satisfied.
You and your family are going to crave this Cattle Drive Casserole so much, it's likely to make its way into your regular dinner routine. Layers of ground beef, bell peppers, onions, cheese, Bisquick and more, make up this easy casserole. If you're like us, that ingredient list includes basically all of your favorite parts of a casserole!
We love the flavors in this recipe, and we love that each bite gives you a little taste of each of the ingredients. You get fluffy biscuit, savory ground beef, gooey cheese, and plenty of zest from the salsa.
This recipe includes jalapenos, so it's a little spicy, but you can easily leave those out if you aren't a huge fan of a little added heat. For a meal that delivers in flavor and that won't leave you hungry, make a casserole out of a taco!
What to Serve with Cattle Drive Casserole
Although this casserole is definitely a meal in and of itself, we won't blame you for wanting a side dish or two to round out your dinner menu.
Because this recipe is so rich, we recommend something a little lighter to go with it! Try adding your favorite green salad (if you need a salad dressing recipe, we definitely recommend this one), a cucucumer salad like this, or Colorful and Fresh Vegetable Salad.
For something that's a little heartier (if you've got a meat-and-potatoes-loving family, we hear you!), you could also whip up this Southern Corn Salad or a simple side of roasted potatoes.

My family loves this taco style casserole. I like Bisquick recipes because they are easier than from scratch dishes. We load this casserole up with guacamole, lettuce, tomatoes, sour cream and extra cheese. I do omit the green pepper. I serve it with chips and salsa on the side. It's a great weeknight meal!

This recipe is totally indulgent, but I still love it! It's got lots of cheese, which might be my favorite part.

This recipe is really good for the taco lovers in our house. They loved it! I did substitute the jalapenos for green chilies, but that is only because it was a preference for my children. Other than that, I made this just as stated above. Everyone crunched up some tostito chips for the top, and it was a complete meal. It is easy to make, and easy to clean up. This is one of those meals I don't mind making at the end of a busy day.

Simple and tasty and filling. It makes a good amount so it is great for a big family. It would also make great leftovers. It heats up well. Sauteing the onions and peppers together saves a little time. I would rather use sliced olives, but that is just my preference.
