I really thought this was going to be a chicken and dressing type of dish. It is similar except the seasonings aren't there and it has cheese. This would be great to make when you have leftover corn bread. When I make cornbread, I always have plenty left over. If you buy chicken breasts, two halves should be enough or one or two hindquarters. Depending on the size of the hindquarters. The hindquarters would be moister.

This looks like a recipe I make sometimes. I usually make mine like a dressing with the chicken and jalapenos added and it is more moist than dry. It would also be good to add some cheese to the top before serving. The vegetables don't need to be cooked before adding to the cornbread?
