Buttery Crumb & Cod Casserole
Mix a plethora of veggies with a stack of Ritz crackers and you get a Buttery Crumb & Cod Casserole. An additional hint of Tabasco sauce in this casserole recipe gives your taste buds a kick!

Ingredients
- 1 1/4 cup cracker crumbs (Ritz or Town House), coarsely crushed
- 1/2 cup butter, melted
- 1/2 cup celery, finely chopped
- 1/2 cup green bell pepper, finely chopped
- 1/4 cup green or mild onion, finely chopped
- 1/4 cup parsley, finely chopped
- 1 teaspoon dry mustard
- 1/2 teaspoon salt
- 3 tablespoons black olives, sliced
- 3 or more drops Tabasco sauce or other hot sauce
- 1/4 cup milk
- 1 to 1 1/2 pounds fresh or frozen cod, cut into 1 inch cubes
Instructions
- Preheat oven to 350 degrees F.
- In a large bowl, combine all ingredients, adding fish last. Mix well.
- Turn into 1 1/2 quart buttered baking dish.
- Bake 20-30 minutes, or until fish flakes easily and crumbs are golden brown.
- Can be served with lemon wedges.
