Candied Yam Casserole
No matter what time of year it is, this easy casserole recipe for candied yams is a household favorite. Prepare it the day before, and simply pop it in the oven to bake until it is a nice golden brown. Your family and friends will be amazed when they see Candied Yam Casserole out on the dinner table, just begging to be eaten. Topped with marshmallows and cooked with brown sugar, it's a sweet side you don't want to miss out on.

Ingredients
- 4 cups yams
- 1/4 cup melted butter
- 1/2 cup brown sugar
- 1 1/2 cup miniature marshmallows
Instructions

Preheat oven to 400 degrees F.

Cut yams into large chunks. Place yams in pot & cover with water.

Bring to a boil, then gently simmer for about 15 minutes, or until yams are fork tender. Drain water & let cool until cool enough to handle.

Peel the skin from the yams. (It should just slide right off!) In same pot, add the melted butter & brown sugar.

Mash yams with potato masher, incorporating the butter & brown sugar. Place yams in prepared casserole dish.

Bake, covered, for 25 minutes. Uncover and spread on the marshmallows.

Bake, uncovered, for another 3 – 5 minutes, until marshmallows are beginning to melt and get lightly brown.

I would definitely double this recipe so that there is enough for everyone. This would be good as a side dish for Thanksgiving or whenever you crave a sweet treat. Marshmallows over sweet potatoes and yams are the best. With very few ingredients and being easy to prepare, this dish would be great anytime.
